Porridge: might be the best breakfast for family

Good morning everyone! Hope everyone is staying safe. I made porridge for my wife and kids today, it’s sweet and nutty and the kids love it. This meal was inspired by a great friend of the family, Roy, actually I would call him family. Roy is from Jamaica, an amazing cook and his food is delicious ?.

Saltfish and Johnny Cakes

Wow! Amazingly deliciously good😋. I wasn’t planning to make this dish but Asenath gave that look and I found myself in the kitchen cooking Saltfish and Johnny Cakes ( aka fried dumplings). My mom showed me how to make this wonderful simple meal. Here is how it’s made...

 1 pound of dry codfish (boil for 15 to 20 minutes, low flame to remove most of the salt), chopped onion, tomato, green pepper with whole thyme, leeks and parsley.

Place your ingredients in a pan of olive oil (or oil you prefer) and then cook for 3 minutes, low flame. Add garlic powder, onion powder, paprika, black pepper and a pinch of cayenne pepper.
Strain the boiled salted cod and add your homemade recaito. Gently place the cod in the pan with your ingredients, mix ingredients and cod together then add 1/2 cup of water. Cover the pan and cook for about 15 minutes, low flame. Enjoy 😊
Johnny Cakes aka fried dumplings 😋. Here is how they're made...
1 cup of flour, 2 tablespoons of sugar, 1/2 teaspoon of salt, 1 teaspoon of baking powder. Then add about a cup of milk and water to create the dough (add more if needed).
Prepare your dumplings.
Fry dumplings until golden brown. Enjoy!!

Escovitch Red Snapper with Sautéed Cabbage

Hi everyone! Hope you’re having a great weekend despite the unfortunate coronavirus. We’ll get through it, stay safe and stay healthy.

So I originally wanted to make saltfish with fried dumplings aka johnny cakes but Asenath said, “l thought you told me you were going to make escovitch fish” I was like, “Errrr”. I totally forgot I said that, smh. After a brief trip to the fish market for the snapper and Aldi for a few ingredients I started preparing our meals. I didn’t have fish, I made my favorite tortilla chipped green salad with roasted red pepper vinaigrette.
Me: “How is it?”
Asenath: “It’s really good”
Me: 😁

Here is how it’s made...
Give your fish a lemon bath. This recipe uses a whole snapper but you can fillet or steak cut the fish.

Rub the fish with your favorite seasonings, I used garlic salt, paprika, garlic power, onion power, black pepper, old bay and homemade recaito (see photo).

Prepare your ingredients. Chopped carrots, green peppers, garlic, onions, hot red pepper (or scotch bonnet peppers), whole thyme, parsley and pimento.
Coat fish in 1 cup flour, a tablespoon of paprika and teaspoon of cumin and fry until golden brown.

Add olive oil, salt and pepper to your frying pan, add all of your ingredients.

Then add 1/4 cup of malt vinegar, 1 teaspoon of sugar, cover the frying pan and let everything cook on a low flame.
Prepare your cabbage.
Add olive oil, garlic salt, garlic power, onion power, green peppers and then add your chopped cabbage. Let it cook on a low flame. Enjoy!

Seafood Curry with Dhal Puri Roti

Did you have a great weekend? I made one of my favorite dishes for my wife today. Here is how it's made...

1 pound of shrimp, 1 6-ounce salmon fillet and 2 4-ounce lobster tails.

Cut the shrimp, salmon fillet and lobster tails into small pieces. Prepare 1/2 cup of curry and 1 can of chickpeas. ​

After you give your seafood a lemon bath😁, place them in a bowl and season with onion powder, garlic powder, paprika, garlic salt, 2 tablespoons of curry and homemade recaito (see photo). Put in the fridge to marinate for 1 hour or more.

Peel potatoes and cube them.

Add the potatoes, chickpeas and curry along with 1 teaspoon each of salt and black pepper, add parsley flakes, cilantro and pimento to 5 cups of water. Boil until potatoes are almost done.

Turn the stove to low and add the marinated seafood mixture to the pot and cook for 5 more minutes. Enjoy!
